Another coffee from our friends at El Vergel, this coffee comes from their Partner Series. Grown and produced in Huila, this coffee is then transported to El Vergel for a 2 step fermentation process of 24 hours in cherry, followed by 48 hours of fermentation in bags of mucilage before it's finished drying on raised beds for 15 days. This unique process shines through with a unique cardamom and honey forward profile. Each brew method brings out a little something different in this coffee with sweetness shining through on the V60. We encourage you to try a 16:1 or 17:1 brew ratio as the sweetness pops a touch more.
