Started by Martha and her two sons, Elias and Shady, El Vergel is a project born out of passion. The Bayter brothers are known for experimental processing that creates wonderful coffees and helps improve the quality of life for families that work together with them on El Vergel. This coffee has been produced for over a decade and involves a mix between traditional and modern processing. It is first washed and processed with 6 hours of aerobic fermentation, followed by 20 hours of aerobic fermentation in steel tanks, and then dried mechanically and sun dried. This fermentation technique really develops clean and lovely fruit flavors in the cup.
