1: Ethiopia Chelchele
Blackberry jam, cranberry, chocolate
Processing: Anaerobic Natural
Altitude: 1900- 2300 msl
Varieties: Ethiopia Heirloom 74112, 74110
Roast: Medium-Light
This region is renowned for high-quality coffee production, and this lot is no exception. The region's altitude (upwards of 7,500 ft), soil, and climate consistently create ideal conditions for growing premium coffee.
This coffee is handpicked at peak ripeness and transported to the mill where it undergoes meticulous sorting. The coffee cherries are sealed in a pressurized, oxygen-free environment, allowing precise control over sugar levels and best fermentation outcomes. The results show in the attention to detail during processing!
Please allow this coffee 5+ days of off gassing after the roast date. You'll love the jammy forward profile, slight tartness, and overall smooth chocolatey finish. Can be prepared well on many brew methods -- this coffee is a fun one!
2: Java Sunda Coucal
Strawberry jam, cranberry, chocolate
Region: Argopuro, Tlogosari, East Java
Growing Altitude: 1200-1600 masl
Process: Anaerobic Natural
Back after so many loved this unique Indonesian offering! Like many Indonesian offerings, this coffee is smooth and has low acidity, but packs a unique and complex flavor punch. This crop has an upfront berry jam with some tartness, and a smooth chocolate backing.
In Tlogosari Village, there's a social non-profit cooperative set up by the villagers for the community’s well-being. The cooperative is called “Walida Cooperative”, led by Ahmad Muhlisin. Twenty percent of the profit from the coffee sales goes directly to the social non-profit cooperative, which runs a local K-12 school that educates the villagers.
Ahmad focuses on natural-processed coffees because water supply is scarce in his area, and the government has not been active in helping build water supply systems. His experience shines through in this offering. Delicious on manual pour-over methods and batch brew, you'll extract something a little different with each method.
3: Mexico Nayarita Peaberry
Citrus, chocolate, honey
Region: El Cuarenteño, Nayarit
Growing Altitude: 1000 masl
Process: Anaerobic Washed
Variety: Bourbon, Typica, Sarchimor
Did you know less than 10% of a standard coffee harvest is composed of peaberries?! This peaberry microlot from Grupo Terruño Nayarita is collected over the course of the harvest at the dry mill, being carefully sorted, rested, and processed.
You can expect a smooth and sweet cup from this roast, with chocolate, honey-like sweetness, and subtle citric acidity coming through. Excellent on all filter methods, and it even shines through on espresso.
