1: Ethiopia Basha Bekele Kokese

Our third offering from Basha Bekele and another fun one! Basha is a renowned producer in the Sidama region who took first place in the 2024 Ethiopia Cup of Excellence. He now has six coffee processing stations, and this lot comes to us from his station in Kokese within the Bensa district.
This lot is light and vibrant! There's fruity sweetness, but with a very clean cup, almost reminiscent of a washed coffee. You'll get a slight cherry tartness depending on your brew method, rounded out with milk chocolate notes. We recommend a minimum 7 day rest period from roast date before you start enjoying this coffee.
2: Colombia Guava Banana

This coffee comes to us from a direct relationship with the Bayter family and El Vergel Estate in the Tolima region of Colombia.
This coffee undergoes 48-60 hours of anaerobic fermentation, which enhances the unique profile and characteristics of this coffee. The name 'Guava Banana' is a play on the fruit Guanabana, which is known for a sweet and sour flavor and reminiscent of the coffee. The Bayters noticed visitors struggling to pronounce Guanabana, and the name Guava Banana was born.
Have fun and experiment with this unique and tasty offering! We are finding a ratio between 1:16 and 1:17 are providing delicious cups on Chemex and V60 alike, with a nice syrupy body and a fun sweet / tart combo.
3: Mexico Chiapas Altura
Chocolate, citrus, toasted almond
Region: Central Highlands, Chiapas
Growing Altitude: 1400-1700 masl

It's always nice to have a classic Chiapas in the lineup! Coming from the San Cristobal de las Casas and northern municipalities, this offering brings a true chocolate profile that lingers long after the first sip. Excellent on batch brew, with more citrus and nut undertones coming through when prepared on manual pour-over methods.
